WSET masterclasses (in-person and virtual)
Wine & Spirit Education Trust (WSET) has been assigned a designated Masterclass Room at Prowine Hong Kong 2021.
In accordance with the Hong Kong government’s Covid regulations on social distancing, the Masterclass Room can accommodate up to 20 participants, and sample tasting will be provided.
To make this content accessible to a greater number of participants in Hong Kong and beyond, these masterclasses will be broadcasted live. In addition, they will be made available to watch on-demand afterwards through selected WSET online platforms.
The masterclasses will also be broadcasted live via Prowine Hong Kong and HOFEX respective online platforms to facilitate access to their visitors. More details about how to access this content online will be shared on this page soon.

Sake and regionality

Although regional difference in sake is not as clearly defined as terroir in wine, some areas where sake come from share distinguishing regional styles. Natsuki of WSET will present this masterclass remotely from the UK, together with Corinne of Corvino Wine School who will lead a sake tasting with onsite attendees. The session will explore several prefectures of Japan and discuss factors contributing to the styles and qualities of sake.

The Role of training in career development and success

Ling of WSET, the largest global provider of wine, spirits and sake qualifications and Paolo of the Vocational Training Council (VTC), the largest vocational education, training and professional development group in Hong Kong, will bring you an interactive session to explore the benefits of skills-based training. Paolo will share some real-life success stories resulting from vocational training. Ling will demonstrate the skillsets developed across the different levels of WSET qualifications and how these can benefit both individuals looking to progress their career and managers wanting to develop a knowledgeable and motivated team in the hospitality and drinks sectors. This session will conclude with a wine tasting to provide practical examples of vocational training in action.

Japanese Whisky: Art of blending

Japanese Whisky has become one of the world’s most sought-after spirits in the past decade. This masterclass will walk you through what Japanese Whisky is and the recent update on labelling guidelines issued by The Japan Spirits & Liqueurs Makers Association. Through the WSET Systematic Approach to Tasting Spirits® (SAT), we will explore the style and quality of Japanese Whiskies. Five Nikka Whiskies will be tasted, including Yoichi (余市) Single Malt and Coffey Grain Whisky, to understand the philosophies behind the blending.

Speaker profiles
Ling Cheong, DipWSET, WSET Certified Educator Business Development Manager - China, WSET - APAC
Bitten by the wine bug when studying at University, Ling has joined the industry for 20 years making it her life-long career. Ling has extensive experience including trade (wholesaling and retailing), media and education. Before joining the WSET team in 2019, Ling worked as a full-time wine educator for one of the WSET providers in Hong Kong. She is now the Business Development Manager of WSET Asia-Pacific Office responsible for markets including Hong Kong, Macau and Taiwan.
Ling holds the WSET Diploma in Wines and Spirits and she is a WSET Certified Educator approved to teach for both wine and spirits qualifications. Ling also obtained her Master of Wine Business Degree at the University of Adelaide in South Australia.
Sky Huo CEO, Drink Cave Ltd
Sky is the founder of Drink Cave Ltd., a premium spirits and food & beverage industry service consultancy company based in Hong Kong. It is Sky's vision to provide high-end, problem-solving oriented strategies to assist clients in developing spirits portfolios, training staff and utilising resources effectively. Sky is currently doing branding work for Nikka Whisky Hong Kong and her clients include Carlsberg, Hong Kong.
Sky pursues her dreams in the hospitality industry after her passion for film art. It surely is a great spotlight for her being one of the Top 25 Bartenders of Drinks World Asia Hong Kong in 2014. The experience inspired her to better herself by working abroad. She has worked in some of the world’s best places like Happiness Forgets, London (Best International Bar 2018) and The Baxter Inn, Sydney (World's 50 Best Bars 12th 2016).
Paolo Gorreri, DipWSET, Manager – International Development, Hotel and Tourism Institute 酒店及旅遊學院, Chinese Culinary Institute 中華廚藝學院, International Culinary Institute 國際廚藝學院
Paolo has been working in the Hospitality sector for over 25 years. Originally from Italy, Paolo worked overseas in different Food and Beverage related roles mostly in the two well-known hotel chains he has served. In 2009, Paolo moved to Hong Kong. With his passion for Restaurant Service and Beverage, he joined the Vocational Training Council in 2013 and has developed himself as an educator since then. Paolo is a holder of the WSET Diploma in Wines and Spirits, the WSET Level 3 Award in Sake, the French Wine Scholar, the Diploma from the Italian Sommelier Association (AIS) and most recently the Spanish Wine Specialist Certificate.
Natsuki Kikuya, 酒サムライ(Sake Samurai), Product Development Manager - Sake, WSET
Born in the sake brewery family in Akita Prefecture of Japan, Natsuki moved to the UK in 2010 to work as a sake sommelier at Zuma restaurant group. Before officially joining the WSET team, she has been working as a sake consultant and one of the leading roles developing WSET Level 3 Awards in Sake qualification since 2013. She is also a Panel Chair judge at International Wine Challenge Sake Category.
Corinne Mui, 酒サムライ(Sake Samurai), Corvino Wine School
Corinne Mui is an award-winning wine & sake educator and writer. She holds a WSET Level 4 Diploma and has over 15 years’ experience in specialist wine teaching for luxury hotels, casinos, airlines and wine traders. Corinne was inducted as the prestige Sake Samurai in 2019. Prior to that, in 2018 she became the first person of Asian descent to be named “Sake Ambassador” by the Sake Sommelier Association in London. She has also made sake vintages at various sake breweries in Japan’s Niigata, Yamanashi and Ehime prefectures and the Kansai region.
Ivy Ng, DipWSET, WSET Certified Educator, Bourgogne Wines Official Ambassador, Community Initiative Manager, WSET - APAC
Hong Kong-native Ivy Ng re-joined the WSET team in November 2020, as the Community Initiative Manager – Asia Pacific. Her mandate is to coordinate the management and administration of the various charity initiatives by WSET across Asia Pacific. She also supports the Business Development team as and when required.
Ivy is the Founder of Cheese & Wine HK, an independent education-based events organiser to promote cheese and wine culture in Hong Kong by collaborating with local and international suppliers.
Ron Taylor, DipWSET, WSET Certified Educator
Ron is a WSET Certified Educator, has been studying wines and spirits for over 35 yrs and lecturing for 21 of those.
