Fermentation drives flavour. In this session, we delve into the fascinating world of fermentation and explore three iconic spirits from around the world: Bourbon, high-ester rum and Baijiu. Each of these spirits has its own unique fermentation process that plays a crucial role in developing the distinctive aromas and flavor profiles. We demonstrate how these different techniques shape the final character of the spirits, offering participants a deeper understanding of the art and science of fermentation. This session will explore how oak and wood finishing impacts style and flavour in whisky, but you won't just learn about the whisky, you'll also learn about the fortified wines from Spain and Portugal that are selected to add additional complexity and intrigue to whiskies across the globe. Join us to taste three fortified wines paired with three whiskies that have been finished in barrels from the same style of wine, using the WSET Systematic Approach to Tasting®.
