Kelsey moved to London to become head bartender at Dandelyan. In 2016, she became Global Champion for Olmeca Altos’ Tahona Society competition in 2016 and continues to work with the brand speaking about sustainability and tequila. In 2016 she and partner Iain Griffiths launched Trash Tiki, a touring pop up that aims to educate others on the impact of organic waste in the drinks industry.
In 2019, Kelsey and Iain will open their first bar, which focuses on indigenous ingredients grown in Canada.
