Discover how this critical stage in the production of sake can produce a range of aromas, flavours and styles. You'll taste six ultra-premium samples alongside some light food pairings.

Event details

The fermentation starter, known as shubu or moto, is a key step in the production of sake and has a profound impact on the drink's style.

Join expert educator Honami Matsumoto to discover the different sake starter making methods – Sokujo, Yamahai, Bodaimoto and Kimoto – which each contribute different levels of acidity, umami, texture and palate structure. Understanding these traditional methods will help you decide which sakes to buy or taste, alongside the other technical considerations such as rice varieties, rice polishing and premium sake grade.

You'll get the chance to taste and compare six sake samples produced using different methods and explore a variety of food pairings.

This is a great event for anyone who'd like to gain practical knowledge to help you to choose sake you really enjoy!
