Join Lallemand Oenology’s Ann Dumont and Master of Wine Dirceu Vianna Junior for a deep dive into the role of yeast in modern winemaking.

In this masterclass, our expert speakers will break down the fermentation process and explore how yeast - both traditional Saccharomyces and non-traditional "non-sacc" yeasts - affects wine. They’ll discuss the latest science behind wine yeasts and how this understanding can help producers enhance quality, create unique styles, and express a sense of place.

To illustrate these points, Ann and Junior have put together a flight of outstanding Pinot Noir wines from around the world. The wine list will be shared soon!

About the speakers

Ann Dumont

After obtaining her B.Sc. in Microbiology form McGill University, Ann joined Lallemand as a microbiologist in the R&D department. While continuing to work for Lallemand, she attended Oregon State University to obtain her M.Sc. where her thesis topic was 'Sensory profile of Oregon Riesling, Chardonnay and Pinot Noir fermented with different Saccharomyces cerevisiae.' In her current role as Communications Manager for Oenology, her focus is education on wine microbiology, hosting seminars and tastings around the world. A member of the Association Canadienne des Oenologues, Ann is also studying for her WSET Diploma.

Dirceu Vianna Junior MW

Dirceu Vianna Junior MW is originally from Brazil, where he studied Forest Engineering and Law before moving to the UK in 1989. He became involved in the wine trade the following year. He has been a director at some of the most important wine distributors in the UK. In 2008, he became the first South American male to obtain the title of Master of Wine. After three decades of experience in different sectors of the industry, Dirceu founded Vianna Wine Resources - a company that consults for wine businesses in all sectors of the industry and around the globe. He is a wine educator, writer, speaker at global wine events, and a judge at wine competitions.

Payment in full must be made at the time of booking and places are not confirmed until payment has been received. Unfortunately we cannot take provisional bookings.

Cancellations and transfers

  • Cancellations and transfers can be made up to two weeks before the event.
  • Cancellations within 10 working days are non-refundable and cannot be transferred to another event.
  • If you need to change a name on the booking, please give us as much notice as possible.
  • WSET School London reserves the right to cancel an event. If necessary, a full refund or transfer will be offered.
